Brussels Sprout Salad

Ingredients:

Salad:

  • 4 cups brussels sprouts, shaved
  • 2 stalks of celery, chopped
  • 2 honey crisp apples, diced
  • 1/3 cup green onions, diced
  • 1/3 cup parsley, chopped
  • 1/3 cup pecans, chopped
  • 1 Tablespoon sage, chopped

Dressing:

  • 3 Tablespoons apple cider vinegar
  • 1/4 cup olive oil
  • 1 Tablespoon maple syrup
  • 1 garlic clove, minced
  • 1 teaspoon Dijon mustard
  • 1 Tablespoon shallots, minced
  • 1/4 teaspoon salt 
  • 1/4 teaspoon pepper

Instructions:

  1. Shred the brussels sprouts with a knife or by using a food processor. Slice up the celery, apples, parsley, sage and green onions.
  2. In a small bowl, add all of the dressing ingredients and whisk together until combined.
  3. Combine the brussels sprouts, celery, green onions, apples, herbs and pecans in a large bowl. Drizzle the dressing all over the salad and mix together until it is evenly coated. Taste and season with salt & pepper if needed.
  4. Serve and enjoy!
