Brussels Sprout Salad
Ingredients:
Salad:
- 4 cups brussels sprouts, shaved
- 2 stalks of celery, chopped
- 2 honey crisp apples, diced
- 1/3 cup green onions, diced
- 1/3 cup parsley, chopped
- 1/3 cup pecans, chopped
- 1 Tablespoon sage, chopped
Dressing:
- 3 Tablespoons apple cider vinegar
- 1/4 cup olive oil
- 1 Tablespoon maple syrup
- 1 garlic clove, minced
- 1 teaspoon Dijon mustard
- 1 Tablespoon shallots, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions:
- Shred the brussels sprouts with a knife or by using a food processor. Slice up the celery, apples, parsley, sage and green onions.
- In a small bowl, add all of the dressing ingredients and whisk together until combined.
- Combine the brussels sprouts, celery, green onions, apples, herbs and pecans in a large bowl. Drizzle the dressing all over the salad and mix together until it is evenly coated. Taste and season with salt & pepper if needed.
- Serve and enjoy!
