Banana Bread Donuts

Ingredients:

  • 1 1/4 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 cup almond flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup overripe bananas, mashed
  • 2 eggs
  • 2 Tablespoons applesauce, unsweetened 
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract

Optional Icing Glaze Ingredients:

  • 1 Tablespoon milk
  • 1/2 cup powdered sugar
  • 1/4 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350 F.
  2. You will need two 6 count donut pans to make these.
  3. In a large bowl, add the flour, baking soda, baking powder, salt, cinnamon and mix until combined. Then, add in the mashed bananas, eggs, applesauce, maple syrup, and vanilla extract. Add in the wet ingredients into the dry ingredients and mix until combined. 
  4. Spray the donut pans with nonstick cooking spray. Using a zip lock bag, add the batter into it, seal and then cut off the corner. Pipe the batter into the donut pans until they are all filled. 
  5. Bake the donuts for about 10 to 13 minute, until they become golden brown and a toothpick comes out clean from the center. Once they are finished, transfer to a cooling wrack.
  6. Optional, make the donut glaze. Add all of the ingredients into a small bowl and mix together to create glaze. Once the donuts are cooled, add on top.
  7. Serve and enjoy!
