Buffalo Chicken Dip

Ingredients:

  • 4 ounces cream cheese, softened
  • 2 boneless, skinless chicken breasts
  • 1/2 cup Frank's red hot sauce
  • 1 cup sour cream or Greek yogurt
  • 1/2 cup blue cheese, crumbled
  • 1 teaspoon white vinegar
  • Scallions, chopped (for topping)
  • Carrots and celery sticks for dipping

Instructions:

  1. To make the chicken, add the chicken into a slow cooker and add in enough water to cover the whole thing. Cook on high for 4 hours, then remove the chicken and shred it with forks, getting rid of the liquid. (To make this dish quicker, buy a rotisserie chicken and shred).
  2. In a bowl, combine the cream cheese, vinegar, Greek yogurt, and hot sauce. Mix together until combined. Add about half of the blue cheese.
  3. Transfer this mixture to the slow cooker with the chicken, mix it well and cook on low for 2 to 3 hours.
  4. Once finished, transfer to a serving dish and top with the rest of the blue cheese and scallions. 
  5. Serve hot and enjoy!
