Buffalo Chicken Dip
Ingredients:
- 4 ounces cream cheese, softened
- 2 boneless, skinless chicken breasts
- 1/2 cup Frank's red hot sauce
- 1 cup sour cream or Greek yogurt
- 1/2 cup blue cheese, crumbled
- 1 teaspoon white vinegar
- Scallions, chopped (for topping)
- Carrots and celery sticks for dipping
Instructions:
- To make the chicken, add the chicken into a slow cooker and add in enough water to cover the whole thing. Cook on high for 4 hours, then remove the chicken and shred it with forks, getting rid of the liquid. (To make this dish quicker, buy a rotisserie chicken and shred).
- In a bowl, combine the cream cheese, vinegar, Greek yogurt, and hot sauce. Mix together until combined. Add about half of the blue cheese.
- Transfer this mixture to the slow cooker with the chicken, mix it well and cook on low for 2 to 3 hours.
- Once finished, transfer to a serving dish and top with the rest of the blue cheese and scallions.
- Serve hot and enjoy!
