Bell Pepper Loaded Nachos

Bell Pepper Loaded Nachos

Ingredients:

  • 1 lb. 93% lean ground turkey
  • 1/4 onion, minced
  • 1 clove of garlic, minced
  • Olive oil spray
  • 1 Tablespoon cilantro, chopped
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/4 cup tomato sauce
  • 1/4 cup chicken broth
  • 1 cup sharp shredded cheddar cheese
  • 21 mini rainbow peppers, halved and seeded
  • 2 Tablespoons black olives, sliced
  • 2 Tablespoons sour cream, thinned out with 1 Tablespoon of water
  • 1 jalapeno, sliced thin

Instructions:

  1. Preheat the oven to 400 F and line a baking sheet with parchment paper.
  2. Spray the olive oil in a medium nonstick skillet over medium heat.
  3. Add the onions, cilantro and garlic into the skillet and sauté for 2 minutes, then add in the turkey, salt, cumin and garlic powder. Cook the meat for about 5 minutes, until it is completely cooked through. Add 1/4 cup of tomato sauce and chicken broth, mix it together well and simmer on medium heat for 5 minutes, then remove it from the heat.
  4. Arrange the halved bell peppers cut side up in a single layer.
  5. Fill each pepper half with the ground turkey mixture, then top them with the shredded cheddar cheese and jalapenos.
  6. Bake these for 10 minutes, until the cheese becomes melted.
  7. Remove them from the oven and top with olives, cilantro and sour cream.
  8. Serve and enjoy!
