Bell Pepper Loaded Nachos
Ingredients:
- 1 lb. 93% lean ground turkey
- 1/4 onion, minced
- 1 clove of garlic, minced
- Olive oil spray
- 1 Tablespoon cilantro, chopped
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/4 cup tomato sauce
- 1/4 cup chicken broth
- 1 cup sharp shredded cheddar cheese
- 21 mini rainbow peppers, halved and seeded
- 2 Tablespoons black olives, sliced
- 2 Tablespoons sour cream, thinned out with 1 Tablespoon of water
- 1 jalapeno, sliced thin
Instructions:
- Preheat the oven to 400 F and line a baking sheet with parchment paper.
- Spray the olive oil in a medium nonstick skillet over medium heat.
- Add the onions, cilantro and garlic into the skillet and sauté for 2 minutes, then add in the turkey, salt, cumin and garlic powder. Cook the meat for about 5 minutes, until it is completely cooked through. Add 1/4 cup of tomato sauce and chicken broth, mix it together well and simmer on medium heat for 5 minutes, then remove it from the heat.
- Arrange the halved bell peppers cut side up in a single layer.
- Fill each pepper half with the ground turkey mixture, then top them with the shredded cheddar cheese and jalapenos.
- Bake these for 10 minutes, until the cheese becomes melted.
- Remove them from the oven and top with olives, cilantro and sour cream.
- Serve and enjoy!
