Mini Thanksgiving Stuffing Bites

Ingredients:

  • One large onion, chopped
  • 1 1/2 loaves white bread, cubed
  • 4 stalks of celery, diced
  • 1 Tablespoon sage, fresh, minced
  • 1 Tablespoon thyme, fresh, minced
  • 1 Tablespoon rosemary, fresh, minced
  • 3 Tablespoons parsley, fresh, minced
  • 1 teaspoon salt
  • 3/4 cup salted butter
  • 1/2 teaspoon pepper
  • 2 cups chicken stock
  • 3 large eggs

Instructions:

  1. Preheat the oven to 350 F.
  2. Tear the bread into bite size pieces and spread them out onto a sheet pan and bake them for 20 minutes or until they become dried.
  3. While the bread bakes, dice the celery, onions and herbs.
  4. In a pan, melt the butter on medium-low heat, then add in the celery and onions. Sauté until they become soft (about 10 minutes), then add in the herbs and cook until they become fragrant. 
  5. In a large bowl, add in the dried bread pieces, as well as the onions, celery. and herbs. Mix to combine.
  6. Crack the 3 large eggs in another bowl and whisk together. Pour the eggs onto the bread mixture, as well as the chicken stock, pepper and salt. Mixed together until it is absorbed into the bread.
  7. Spray a muffin pan with oil or line with liners. Add in a scoop of the stuffing mix to each tin. Bake them for 30 minutes, remove and serve warm.
