Caprese & Pesto Grilled Cheese
Ingredients:
Pesto:
- 1/4 cup almonds
- 2 cloves of garlic
- 2 cups arugula
- 1 cup basil leaves
- 1/8 cup lemon juice
- 1/3 cup olive oil
- 1/2 teaspoon salt
- Pepper to taste
Grilled Cheese:
- Sourdough or bread of choice
- Tomatoes, sliced
- Mozzarella cheese, sliced
- Butter and olive oil for the pan
Instructions:
- Preheat the oven to 375 F.
- Make the pesto: In a food processor, add all of the ingredients (almonds, garlic, arugula, basil, lemon juice, olive oil, salt, pepper) and pulse to combine.
- On the bread, layer the pesto, mozzarella, and tomatoes between the slices of bread.
- Heat the butter and olive oil in the bottom of a pan. Lightly crisp each side of the bread, then place it into the oven and bake until the cheese is fully melted (about 10 minutes).
- Serve and enjoy!
