Caprese & Pesto Grilled Cheese

Ingredients:

Pesto:

  • 1/4 cup almonds
  • 2 cloves of garlic
  • 2 cups arugula
  • 1 cup basil leaves
  • 1/8 cup lemon juice
  • 1/3 cup olive oil
  • 1/2 teaspoon salt
  • Pepper to taste

Grilled Cheese:

  • Sourdough or bread of choice
  • Tomatoes, sliced
  • Mozzarella cheese, sliced
  • Butter and olive oil for the pan

Instructions:

  1. Preheat the oven to 375 F.
  2. Make the pesto: In a food processor, add all of the ingredients (almonds, garlic, arugula, basil, lemon juice, olive oil, salt, pepper) and pulse to combine.
  3. On the bread, layer the pesto, mozzarella, and tomatoes between the slices of bread.
  4. Heat the butter and olive oil in the bottom of a pan. Lightly crisp each side of the bread, then place it into the oven and bake until the cheese is fully melted (about 10 minutes).
  5. Serve and enjoy!
