Egg Bite Recipe

Ingredients:

  • 6 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/4 cup shredded cheddar cheese
  • 1 1/4 cup full fat cottage cheese
  • 1 roasted red pepper, sliced
  • 1/4 cup fresh basil
  • Optional: cherry tomatoes cut in half, parmesan cheese to top

Instructions:

  1. Preheat the oven to 300 F. Place a pan full of water on the lower rack of the oven to create steam.
  2. Grease a non-stick muffin tin or use muffin liners.
  3. In a bowl, add the eggs, shredded cheddar, cottage cheese, salt and pepper into a blender and blend until it becomes smooth.
  4. Add the batter evenly into the muffin tins about 3/4 of the way high.
  5. Add the chopped roasted red pepper and basil on top of the batter in the muffin tins, stir so it gets mixed a little bit. Top with the halved cherry tomatoes and sprinkle with parmesan cheese.
  6. Place the egg bites on the middle rack of the oven and bake until the egg bites are set and golden (about 20-30 minutes). 
  7. Let the egg bites cool after they are done for about 5 minutes.
