Egg Bite Recipe
Ingredients:
- 6 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/4 cup shredded cheddar cheese
- 1 1/4 cup full fat cottage cheese
- 1 roasted red pepper, sliced
- 1/4 cup fresh basil
- Optional: cherry tomatoes cut in half, parmesan cheese to top
Instructions:
- Preheat the oven to 300 F. Place a pan full of water on the lower rack of the oven to create steam.
- Grease a non-stick muffin tin or use muffin liners.
- In a bowl, add the eggs, shredded cheddar, cottage cheese, salt and pepper into a blender and blend until it becomes smooth.
- Add the batter evenly into the muffin tins about 3/4 of the way high.
- Add the chopped roasted red pepper and basil on top of the batter in the muffin tins, stir so it gets mixed a little bit. Top with the halved cherry tomatoes and sprinkle with parmesan cheese.
- Place the egg bites on the middle rack of the oven and bake until the egg bites are set and golden (about 20-30 minutes).
- Let the egg bites cool after they are done for about 5 minutes.
