Homemade Crunchy Granola Bars
Ingredients:
- 1/2 cup roasted walnuts, chopped
- 1 teaspoon coconut oil, melted
- 1/2 cup roasted almonds, unsalted
- 1/2 cup roasted peanuts, unsalted
- 1 Tablespoon flaxseed meal
- 1/3 cup puffed rice
- 2 Tablespoon maple syrup
- 1/4 cup brown rice syrup
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 1/2 cup dark chocolate chips
Instructions:
- Line an 8-inch pan with aluminum foil.
- In a large bowl, drizzle the melted coconut oil making sure to coat the bow, then mix together the puffed rice, nuts and flaxseed meal.
- In a small saucepan, combine the maple syrup, brown rice syrup, salt, vanilla and bring it to a boil. Once it starts to boil, continuously whisk until it thickens and become sticky.
- Pour the syrup immediately over the nut mixture and stir to combine. Then, transfer it into the lined 8-inch pan and spread out evenly. Let this sit and cool for about 30 minutes.
- Once cooled, remove the mixture and place it on a cutting board and cut into 10 even bars. While they are continuing to cool, melt the dark chocolate.
- Add the chocolate chips into a bowl and microwave in 30-second intervals until it is smooth.
- Drizzle the melted chocolate over the bars and let it set.
- Store in an airtight container for up to a week or freeze to save for later.
- Enjoy!
