Homemade Crunchy Granola Bars

Homemade Crunchy Granola Bars

Ingredients:

  • 1/2 cup roasted walnuts, chopped
  • 1 teaspoon coconut oil, melted
  • 1/2 cup roasted almonds, unsalted
  • 1/2 cup roasted peanuts, unsalted
  • 1 Tablespoon flaxseed meal
  • 1/3 cup puffed rice
  • 2 Tablespoon maple syrup
  • 1/4 cup brown rice syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/2 cup dark chocolate chips

Instructions:

  1. Line an 8-inch pan with aluminum foil. 
  2. In a large bowl, drizzle the melted coconut oil making sure to coat the bow, then mix together the puffed rice, nuts and flaxseed meal. 
  3. In a small saucepan, combine the maple syrup, brown rice syrup, salt, vanilla and bring it to a boil. Once it starts to boil, continuously whisk until it thickens and become sticky.
  4. Pour the syrup immediately over the nut mixture and stir to combine. Then, transfer it into the lined 8-inch pan and spread out evenly. Let this sit and cool for about 30 minutes. 
  5. Once cooled, remove the mixture and place it on a cutting board and cut into 10 even bars. While they are continuing to cool, melt the dark chocolate.
  6. Add the chocolate chips into a bowl and microwave in 30-second intervals until it is smooth.
  7. Drizzle the melted chocolate over the bars and let it set. 
  8. Store in an airtight container for up to a week or freeze to save for later.
  9. Enjoy!
