Pesto Pasta with Peas & Arugula

Ingredients:

  • 1 lb. whole wheat pasta
  • 2 cups frozen peas, thawed
  • 4 cups arugula

Pesto:

  • 2 Tablespoons mint, fresh
  • 3 cloves garlic
  • 2 cups arugula
  • 1 cup frozen peas, thawed
  • 1/4 cup pine nuts
  • 2 Tablespoons lemon juice
  • 1/3 cup parmesan cheese
  • 1/2 teaspoon salt
  • 1/3 cup olive oil
  • 1/4 teaspoon black pepper

Instructions:

  1. Bring a pot of salted water to a boil and cook the pasta according to the package. Drain once cooked. 
  2. While the pasta is cooking, add all of the pesto ingredients into a food processor except for the olive oil. Chop everything up in the food processor, then slowly add in the olive oil and mix until smooth.
  3. In a large bowl, add the warm pasta, pesto, peas and arugula and mix together. 
  4. Serve with extra pepper and parmesan cheese if desired. Enjoy!
