Pesto Pasta with Peas & Arugula
Ingredients:
- 1 lb. whole wheat pasta
- 2 cups frozen peas, thawed
- 4 cups arugula
Pesto:
- 2 Tablespoons mint, fresh
- 3 cloves garlic
- 2 cups arugula
- 1 cup frozen peas, thawed
- 1/4 cup pine nuts
- 2 Tablespoons lemon juice
- 1/3 cup parmesan cheese
- 1/2 teaspoon salt
- 1/3 cup olive oil
- 1/4 teaspoon black pepper
Instructions:
- Bring a pot of salted water to a boil and cook the pasta according to the package. Drain once cooked.
- While the pasta is cooking, add all of the pesto ingredients into a food processor except for the olive oil. Chop everything up in the food processor, then slowly add in the olive oil and mix until smooth.
- In a large bowl, add the warm pasta, pesto, peas and arugula and mix together.
- Serve with extra pepper and parmesan cheese if desired. Enjoy!
