Wild Rice & Chicken Salad
Ingredients:
- 3/4 cup uncooked wild rice
- 2 cups cooked chicken, shredded
- 1/4 teaspoon salt
- 1/2 cup celery, diced
- 4 cups arugula
- 1/3 cup almonds, sliced
- 1/3 cup scallions, chopped
Dressing Recipe:
- 1/2 cup olive oil
- 1 Tablespoon lemon juice
- 1/4 cup white wine vinegar
- 1 teaspoon maple syrup
- 2 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Make the wild rice: Rinse wild rice in water and bring a pot of water to a boil on the stove. Add the wild rice and cook for 40 to 50 minutes, until the rice is tender and starts to split open. Drain the rice.
- While the wild rice is cooking, make the dressing by combining all of the ingredients in a bowl and whisking together.
- Plate: Add the arugula to the bottom of a large bowl, add the wild rice, chicken, almonds, celery, and scallions. Add the dressing on top and toss everything together.
- Serve and enjoy!
