Wild Rice & Chicken Salad

Ingredients:

  • 3/4 cup uncooked wild rice
  • 2 cups cooked chicken, shredded
  • 1/4 teaspoon salt
  • 1/2 cup celery, diced
  • 4 cups arugula
  • 1/3 cup almonds, sliced
  • 1/3 cup scallions, chopped

Dressing Recipe:

  • 1/2 cup olive oil
  • 1 Tablespoon lemon juice
  • 1/4 cup white wine vinegar 
  • 1 teaspoon maple syrup
  • 2 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Make the wild rice: Rinse wild rice in water and bring a pot of water to a boil on the stove. Add the wild rice and cook for 40 to 50 minutes, until the rice is tender and starts to split open. Drain the rice.
  2. While the wild rice is cooking, make the dressing by combining all of the ingredients in a bowl and whisking together.
  3. Plate: Add the arugula to the bottom of a large bowl, add the wild rice, chicken, almonds, celery, and scallions. Add the dressing on top and toss everything together.
  4. Serve and enjoy!
