Instant Pot Beef Stew

Ingredients:

  • 2 lbs. beef, chuck roast, cut into 2 inch cubes
  • 1 medium onion, sliced thin
  • 6 carrots, sliced
  • 2 stalks celery, sliced
  • 1/2 cup tomato juice
  • 2 teaspoons salt
  • 1 Tablespoon maple syrup
  • Slurry (2 Tablespoons corn starch, 1/4 cup water)

Instructions:

  1. Place all ingredients into an instant pot and stir together. Select the stew/meal setting (about 35 minutes, high pressure). After that is done, let everything sit for about 10 minutes before releasing the steam.
  2. Option to add ingredients into the oven for more browning. Add to preheated oven at 400 F for about 10-20 minutes uncovered before serving.
  3. Serve and enjoy!
