Instant Pot Beef Stew
Ingredients:
- 2 lbs. beef, chuck roast, cut into 2 inch cubes
- 1 medium onion, sliced thin
- 6 carrots, sliced
- 2 stalks celery, sliced
- 1/2 cup tomato juice
- 2 teaspoons salt
- 1 Tablespoon maple syrup
- Slurry (2 Tablespoons corn starch, 1/4 cup water)
Instructions:
- Place all ingredients into an instant pot and stir together. Select the stew/meal setting (about 35 minutes, high pressure). After that is done, let everything sit for about 10 minutes before releasing the steam.
- Option to add ingredients into the oven for more browning. Add to preheated oven at 400 F for about 10-20 minutes uncovered before serving.
