Layered Beet Salad
Ingredients:
- 2-3 cups kale, chopped
- 2-3 oranges, cut into rounds
- 1/4 cup mix olive oil and lemon juice
- 1 shallot, minced
- 8 small beets, cooked
- 1/2 cup ricotta cheese
- 1/2 cup pistachios
- 2 Tablespoons fresh basil, chopped
Instructions:
- Massage the kale with a small amount of the oil and lemon juice to soften it.
- Slice the oranges and beets into rounds, chop the shallots.
- Add the ricotta cheese into the bottom of a bowl and spread it around a little. Layer the rest of the ingredients on top of the cheese, layer the kale, beets, oranges, shallots, pistachios and herbs. Finish with olive oil, salt and pepper if you would like.
- Serve and enjoy!
