Lemon & Herb Roasted Salmon
Ingredients:
- 2 1/2 lb. salmon fillet
- 2 lemons, sliced
- 5 Tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- 3/4 cup parsley
- 1/2 teaspoon black pepper
- 1/4 cup dill
- 1 Tablespoon lemon juice
- 2 Tablespoons shallots, chopped
- 3 pitted green olives
- 1 anchovy, chopped
Instructions:
- Preheat oven to broil with rack in top position. Line a large baking sheet with foil.
- Add lemon slices to the foil sheet, then add whole salmon fillet on top of the lemons skin side down. Rub the salmon with olive oil and garlic, sprinkle with 1/2 teaspoon salt and pepper. Let this marinate for about 10 minutes and then broil for 10-12 minutes.
- Make the herb sauce: add the parsley, shallots, dill, lemon juice, anchovies, olives, remaining olive oil and salt into a blender and blend until smooth.
- Plate the salmon fillet and top with the herb sauce.
- Serve with favorite sides or as is and enjoy!
