Parmesan Roasted Carrots

Ingredients:
Carrots:
- 1 1/2 lbs. carrots, cut into strips
- 2 teaspoons dried parsley
- 1 Tablespoon olive oil
- 1 1/2 teaspoon garlic powder
- 1 1/2 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon pepper
- 1/4 cup parmesan cheese
- Optional: lemon zest
Sauce:
- 1/3 cup Greek yogurt
- 1/4 teaspoon garlic powder
- 1 Tablespoon balsamic vinegar
- 1 Tablespoon pesto
Instructions:
- Preheat the oven to 425 F. Cut the carrots into strips and add onto a large baking pan. Spray the carrots with the 1 Tablespoon of olive oil and sprinkle with the dried herbs/spices. Toss together well and roast them in the oven for about 12 minutes or until they become tender.
- Toss the carrots with the parmesan cheese and if you have access to a broiler, broil them for about 5 minutes.
- Combine all of the sauce ingredients in a bowl and mix well.
- Serve the carrot sticks with the sauce on the side and enjoy!
