Parmesan Roasted Carrots

Ingredients:

Carrots:

  • 1 1/2 lbs. carrots, cut into strips
  • 2 teaspoons dried parsley
  • 1 Tablespoon olive oil
  • 1 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1/4 cup parmesan cheese
  • Optional: lemon zest 

Sauce:

  • 1/3 cup Greek yogurt
  • 1/4 teaspoon garlic powder
  • 1 Tablespoon balsamic vinegar
  • 1 Tablespoon pesto 

Instructions:

  1. Preheat the oven to 425 F. Cut the carrots into strips and add onto a large baking pan. Spray the carrots with the 1 Tablespoon of olive oil and sprinkle with the dried herbs/spices. Toss together well and roast them in the oven for about 12 minutes or until they become tender. 
  2. Toss the carrots with the parmesan cheese and if you have access to a broiler, broil them for about 5 minutes.
  3. Combine all of the sauce ingredients in a bowl and mix well.
  4. Serve the carrot sticks with the sauce on the side and enjoy!
