Pasta Primavera

Pasta Primavera

Ingredients:

  • 10 ounces of penne pasta, dry 
  • 4 cloves garlic, minced
  • 2 Tablespoons olive oil
  • 1 yellow squash, sliced into half moons
  • 1 bunch of asparagus, chopped
  • 1 zucchini, sliced into half moons
  • 1 cup red onion, sliced thin
  • 1 cup cherry tomatoes, halved 
  • 1 teaspoon salt
  • 3 Tablespoons lemon juice, fresh
  • 1 cup basil, fresh
  • 1/2 cup frozen peas
  • 3/4 cup parmesan cheese, grated
  • Red pepper flakes to taste
  • Black pepper to taste

Instructions:

  1. Bring a large pot of water to a boil. Prepare the pasta according to the package, cook until it is al dente. Drain the pasta and drizzle with some olive oil if needed for sticking.
  2. In a skillet, heat the olive oil over medium heat. Add in the garlic, zucchini, squash, asparagus, onions, tomatoes, salt and black pepper, sauté together for about 4 minutes. 
  3. Next, add in the pasta, lemon juice, peas, parmesan cheese, red pepper flakes and mix together. Stir in the basil last.
  4. Serve and enjoy!
