Pasta Primavera
Ingredients:
- 10 ounces of penne pasta, dry
- 4 cloves garlic, minced
- 2 Tablespoons olive oil
- 1 yellow squash, sliced into half moons
- 1 bunch of asparagus, chopped
- 1 zucchini, sliced into half moons
- 1 cup red onion, sliced thin
- 1 cup cherry tomatoes, halved
- 1 teaspoon salt
- 3 Tablespoons lemon juice, fresh
- 1 cup basil, fresh
- 1/2 cup frozen peas
- 3/4 cup parmesan cheese, grated
- Red pepper flakes to taste
- Black pepper to taste
Instructions:
- Bring a large pot of water to a boil. Prepare the pasta according to the package, cook until it is al dente. Drain the pasta and drizzle with some olive oil if needed for sticking.
- In a skillet, heat the olive oil over medium heat. Add in the garlic, zucchini, squash, asparagus, onions, tomatoes, salt and black pepper, sauté together for about 4 minutes.
- Next, add in the pasta, lemon juice, peas, parmesan cheese, red pepper flakes and mix together. Stir in the basil last.
- Serve and enjoy!
