Spanish Rice

Ingredients:

  • 1/2 onion, diced
  • 1 Tablespoon olive oil
  • 1 Tablespoon tomato paste
  • 1 cup white rice, uncooked
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, chopped
  • 1/2 cup tomatoes, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 1 1/2 cups vegetable broth

Instructions:

  1. In a medium pot, add in the olive oil and heat. Then add in the onions and cook for about 8 minutes or until they are softened. Next, add in the cup of rice and cook for 2 minutes or until toasted.
  2. Stir in the tomato paste and garlic, then add in the jalapenos, tomatoes, oregano, salt, and broth. Bring this to a boil then cover and reduce the heat, simmer for 15 minutes or until the liquid is absorbed.
  3. Remove from the heat and let it sit, covered, for 10 minutes.
  4. Serve and enjoy!
