Spanish Rice
Ingredients:
- 1/2 onion, diced
- 1 Tablespoon olive oil
- 1 Tablespoon tomato paste
- 1 cup white rice, uncooked
- 2 cloves garlic, minced
- 1 jalapeno pepper, chopped
- 1/2 cup tomatoes, diced
- 1/2 teaspoon salt
- 1/4 teaspoon dried oregano
- 1 1/2 cups vegetable broth
Instructions:
- In a medium pot, add in the olive oil and heat. Then add in the onions and cook for about 8 minutes or until they are softened. Next, add in the cup of rice and cook for 2 minutes or until toasted.
- Stir in the tomato paste and garlic, then add in the jalapenos, tomatoes, oregano, salt, and broth. Bring this to a boil then cover and reduce the heat, simmer for 15 minutes or until the liquid is absorbed.
- Remove from the heat and let it sit, covered, for 10 minutes.
