Roasted Cauliflower Tacos

Ingredients:

  • 1 head of cauliflower, cut into florets
  • 1/4 cup olive oil
  • 1 lb. red cabbage, sliced thin
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon coriander
  • Corn tortillas
  • Avocado
  • Jalapenos
  • Cilantro
  • Salsa

Instructions:

  1. Preheat the oven to 400 F.
  2. Place the cabbage and cauliflower on a large sheet pan. Drizzle the olive oil over, cumin, coriander, and salt over the cabbage and cauliflower. Mix together evenly and spread out across the pan.
  3. Add the pan into the oven and roast for about 45 minutes until golden brown.
  4. Make the tacos. Add in the cabbage and cauliflower, top with toppings of choice (avocado, jalapenos, cilantro, salsa, etc.).
  5. Serve and enjoy!
