Roasted Cauliflower Tacos
Ingredients:
- 1 head of cauliflower, cut into florets
- 1/4 cup olive oil
- 1 lb. red cabbage, sliced thin
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1 teaspoon coriander
- Corn tortillas
- Avocado
- Jalapenos
- Cilantro
- Salsa
Instructions:
- Preheat the oven to 400 F.
- Place the cabbage and cauliflower on a large sheet pan. Drizzle the olive oil over, cumin, coriander, and salt over the cabbage and cauliflower. Mix together evenly and spread out across the pan.
- Add the pan into the oven and roast for about 45 minutes until golden brown.
- Make the tacos. Add in the cabbage and cauliflower, top with toppings of choice (avocado, jalapenos, cilantro, salsa, etc.).
- Serve and enjoy!
