Roasted Red Pepper Pasta

Roasted Red Pepper Pasta

Ingredients:

  • 1 cup milk of choice
  • 3/4 cup basil, fresh
  • 16 ounce jar roasted red peppers, drained and rinsed
  • 3 Tablespoons olive oil
  • 1 Tablespoon lemon juice, fresh
  • 2 garlic cloves
  • 6 sundried tomatoes, chopped
  • 1/4 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/4 cup parmesan cheese, grated
  • 12 ounces of pasta, rigatoni 
  • Red pepper flakes and pine nuts (optional) for serving 

Instructions:

  1. In a blender, add in the milk, red peppers, sundried tomatoes, basil, lemon juice, olive oil, paprika, salt, and garlic. Blend together until it becomes creamy.
  2. Add water to a large pot and boil, add salt. Cook the pasta for about 10 minutes.
  3. Heat a skillet over medium heat and add in the sauce from the blender. Add the pasta into the sauce and stir. Cook together over low heat for about 5 minutes. Add in the parmesan cheese, and stir it in until the cheese melts, then remove it from the heat.
  4. Serve with more cheese, red pepper flakes and pine nuts if desired!
