Roasted Red Pepper Pasta
Ingredients:
- 1 cup milk of choice
- 3/4 cup basil, fresh
- 16 ounce jar roasted red peppers, drained and rinsed
- 3 Tablespoons olive oil
- 1 Tablespoon lemon juice, fresh
- 2 garlic cloves
- 6 sundried tomatoes, chopped
- 1/4 teaspoon salt
- 1/2 teaspoon smoked paprika
- 1/4 cup parmesan cheese, grated
- 12 ounces of pasta, rigatoni
- Red pepper flakes and pine nuts (optional) for serving
Instructions:
- In a blender, add in the milk, red peppers, sundried tomatoes, basil, lemon juice, olive oil, paprika, salt, and garlic. Blend together until it becomes creamy.
- Add water to a large pot and boil, add salt. Cook the pasta for about 10 minutes.
- Heat a skillet over medium heat and add in the sauce from the blender. Add the pasta into the sauce and stir. Cook together over low heat for about 5 minutes. Add in the parmesan cheese, and stir it in until the cheese melts, then remove it from the heat.
- Serve with more cheese, red pepper flakes and pine nuts if desired!
