Spinach, Feta & Chicken Wrap

Ingredients:

  • 1/4 cup feta cheese, crumbled
  • 1/2 cup plain Greek yogurt
  • 2 Tablespoons sun-dried tomatoes
  • 2 teaspoons lemon zest, grated
  • 1 Tablespoon oregano, dried
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 cups chicken, shredded
  • 4 cups baby spinach
  • 4 (10-inch) tortillas

Instructions:

  1. Stir together the feta cheese, sun-dried tomatoes, Greek yogurt, garlic powder, lemon zest, oregano, black pepper, red pepper flakes until it becomes smooth. Fold in the shredded chicken, coating evenly.
  2. Place 1 cup of spinach and about 1/2 cup of the chicken mixture in the center of the tortillas. Fold the sides and edges over the center until it is all rolled up. Slice in half.
  3. Serve and enjoy!
