White Bean Turkey Chili

White Bean Turkey Chili

Ingredients:

  • 3 Tablespoons olive oil
  • 1 large onion, diced
  • 1 pound 93% lean ground turkey
  • 2 medium zucchini, diced
  • 4 cloves garlic, minced
  • 2 Tablespoons dried oregano
  • 4 teaspoons ground cumin
  • 1/2 cup bulgur
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon salt
  • 1/2 teaspoon white pepper
  • 2 cans low sodium white beans, drained and rinsed
  • 2 cans green chilis, mild or hot
  • 4 cups reduced sodium chicken broth

Instructions:

  1. Heat the oil in a Dutch oven over medium-high heat. Add in the ground turkey, garlic and onion. Cook together, breaking up the turkey with a wooden spoon (about 3 to 5 minutes).
  2. Next, add in the zucchini and cook until it starts to soften, about 30 seconds to 1 minute.
  3. Add in the bulgur, cumin, oregano, white pepper, coriander and salt. Cook for 30 seconds to 1 minute to become fragrant.
  4. Stir in the white beans and chiles, then pour in the chicken broth and bring to a boil.
  5. Reduce the heat to a simmer, partially cover the pot and cook, stirring occasionally, until the liquid is reduced and thickened, and the bulgur is tender (about 50 minutes).
  6. Serve and enjoy!
