Greek Yogurt Lemon Bars

Ingredients:

Crust:

  • 1 cup graham cracker crumbs
  • 3 Tablespoons unsalted butter, melted
  • 1 Tablespoon granulated sugar

Filling:

  • 3/4 cup plain Greek yogurt
  • 6 ounce brick cream cheese, softened
  • 2 large eggs, 1 egg yolk
  • 1/3 cup granulated sugar
  • 1/3 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 Tablespoon lemon zest

Instructions:

  1. Preheat the oven to 300 F. Line a 8-inch square baking pan with parchment paper.
  2. Make the crust: In a medium bowl, whisk together the graham cracker crumbs and granulated sugar together. Next, add in the melted butter and stir together until combined. Press the mixture evenly into the bottom of the baking pan. Bake in the oven for about 8 minutes. Remove from the oven and let cool.
  3. Make the filling: In a large bowl, using a handheld mixer or stand mixer with a whisk attachment. Beat the cream cheese on high speed until it becomes completely smooth, about 1 minute. Next, add in the yogurt and beat on medium-high speed until mixed. Beat in the eggs and the egg yolk, then add in the lemon zest, lemon juice, granulated sugar and vanilla extract, beat everything together until there are no lumps. Pour the filling into the baked crust.
  4. Bake for 35-40 minutes, until the middle is no longer wobbly. A little jiggle is okay, it will set the rest of the way in the refrigerator. 
  5. Once baked, add onto a cooling rack and let cool for 1 hour. Then transfer to the fridge for 3-4 hours or overnight to chill. 
  6. Once they are chilled, cut into squares and keep in the fridge for up to 5 days.
  7. Serve and enjoy!
