Apple & Kale Salad
Ingredients:
For Salad:
- 4 cups kale, chopped
- 4 shallots, sliced thin
- 2 cups brussels sprouts, shredded
- 1/4 cup olive oil
- 1-2 large apples
- 1 cup lightly salted cashews
- Shredded cheddar cheese (optional)
For Maple Dijon Dressing:
- 2 Tablespoons apple cider vinegar
- 2 Tablespoons olive oil
- 2 Tablespoons maple syrup
- 1/4 cup plain Greek yogurt
- 2 Tablespoons Dijon mustard
- Salt & pepper to taste
Instructions:
- Make the dressing: add all of the ingredients into a blender and blend until smooth, add salt and pepper to taste.
- Shred up the brussels sprouts and kale, chop the cashews and apples.
- Fry the shallots in a little bit of oil in a skillet until golden brown and crispy.
- Add the kale and brussels sprouts to the bottom of a bowl, top with apples, cashews, shallots and cheddar cheese. Mix in the maple Dijon dressing.
- Serve and enjoy!
