Apple & Kale Salad

Apple & Kale Salad


For Salad:

  • 4 cups kale, chopped
  • 4 shallots, sliced thin 
  • 2 cups brussels sprouts, shredded
  • 1/4 cup olive oil
  • 1-2 large apples
  • 1 cup lightly salted cashews
  • Shredded cheddar cheese (optional)

For Maple Dijon Dressing:

  • 2 Tablespoons apple cider vinegar
  • 2 Tablespoons olive oil
  • 2 Tablespoons maple syrup
  • 1/4 cup plain Greek yogurt
  • 2 Tablespoons Dijon mustard
  • Salt & pepper to taste


  1. Make the dressing: add all of the ingredients into a blender and blend until smooth, add salt and pepper to taste.
  2. Shred up the brussels sprouts and kale, chop the cashews and apples.
  3. Fry the shallots in a little bit of oil in a skillet until golden brown and crispy.
  4. Add the kale and brussels sprouts to the bottom of a bowl, top with apples, cashews, shallots and cheddar cheese. Mix in the maple Dijon dressing.
  5. Serve and enjoy!
