Light & Crispy Tofu

Light & Crispy Tofu

Ingredients:

  • 1 block of extra firm tofu
  • 1 Tablespoon tamari (soy sauce)
  • 1 Tablespoon olive oil
  • 2 Tablespoons cornstarch
  • 1/4 cup yum yum sauce (1 cup mayonnaise, 2 Tablespoons tomato paste, 1 Tablespoon rice vinegar, 1 teaspoon paprika, 1 teaspoon garlic powder, 1 Tablespoon sugar, 1 Tablespoon melted butter, 2-3 Tablespoons water)
  • 1 Tablespoon honey (optional)
  • 1 1/2 cups white rice
  • 1/4 cup green onions, chopped (for topping)

Instructions:

  1. Preheat the oven to 425 F. Line a baking sheet with parchment paper.
  2. Cook the rice according to the package.
  3. Prep the tofu: press the tofu with something heavy to get as much moisture out as possible, then cut the tofu into even cubes. Add the tofu into a bowl and add in the cornstarch, tamari, and olive oil. Toss and gently coat the tofu in this mixture.
  4. Add the coated tofu to the lined baking sheet and add it into the oven, cook for 20-25 minutes.
  5. Make the yum yum sauce: add all ingredients into a bowl and mix together.
  6. Once the tofu is cooked, serve with yum yum sauce.
  7. Serve with rice and green onions, enjoy!
