Basil & Tomato Salmon

Ingredients:

Spice Rub:

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1 Tablespoon olive oil
  • 1 lb. salmon filet, cut into 3 pieces

Tomato Salad:

  • 1 1/2 cups halved cherry tomatoes
  • 1-2 cups fresh spinach
  • 1 Tablespoon olive oil
  • 2 ears of sweet corn, cut off the cob
  • 2 Tablespoons parsley, minced
  • Salt, garlic powder and black pepper to taste
  • 2 cups cooked brown rice

Basil Sauce:

  • 1 bunch chives
  • 1/2 cup basil, fresh
  • 1 clove of garlic
  • 1 teaspoon dried oregano
  • 1/2 cup mayo
  • 1/4 cup parmesan cheese
  • 1-2 Tablespoons lemon juice
  • Salt to taste

Instructions:

  1. Tomato salad: Mix all of the ingredients together in a bowl and set aside.
  2. Make the basil sauce: Add all ingredients into a blender and blend until smooth.
  3. Prep the salmon: Preheat the oven to 425 F. Mix the spiced together and then stir in the olive oil, coat the salmon with the spice mixture.
  4. Add the salmon to a lined baking sheet for about 12-minutes.
  5. Plate the rice in a bowl, top with the salmon, then add the salad and sauce over top.
  6. Serve and enjoy!
