Basil & Tomato Salmon
Ingredients:
Spice Rub:
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1 Tablespoon olive oil
- 1 lb. salmon filet, cut into 3 pieces
Tomato Salad:
- 1 1/2 cups halved cherry tomatoes
- 1-2 cups fresh spinach
- 1 Tablespoon olive oil
- 2 ears of sweet corn, cut off the cob
- 2 Tablespoons parsley, minced
- Salt, garlic powder and black pepper to taste
- 2 cups cooked brown rice
Basil Sauce:
- 1 bunch chives
- 1/2 cup basil, fresh
- 1 clove of garlic
- 1 teaspoon dried oregano
- 1/2 cup mayo
- 1/4 cup parmesan cheese
- 1-2 Tablespoons lemon juice
- Salt to taste
Instructions:
- Tomato salad: Mix all of the ingredients together in a bowl and set aside.
- Make the basil sauce: Add all ingredients into a blender and blend until smooth.
- Prep the salmon: Preheat the oven to 425 F. Mix the spiced together and then stir in the olive oil, coat the salmon with the spice mixture.
- Add the salmon to a lined baking sheet for about 12-minutes.
- Plate the rice in a bowl, top with the salmon, then add the salad and sauce over top.
- Serve and enjoy!
