Tomato & Beef Stew
Ingredients:
- 1 Tablespoon olive oil
- 1 can tomato paste
- 2 lbs. beef, cubed
- 1 can stewed tomatoes
- 4 cups of beef broth
- 1 medium onion, chopped
- 1 Tablespoon Worcestershire sauce
- 3 stalks of celery, chopped
- 3 large carrots, sliced
- 1 cup of peas, frozen
- 1 lb. of potatoes, sliced
- 2 teaspoons garlic powder
- 1 teaspoon salt
- 1 Tablespoon thyme, chopped
- 1/2 teaspoon black pepper
- 2 teaspoons rosemary, chopped
- 1 bay leaf (for flavor)
Instructions:
- In a large pot on the stove over medium heat, add in the olive oil until it is heated. Next, add in the cubed beef and cook on all sides, about 5 minutes.
- Add in the rest of the ingredients to the pot and bring them all to a boil. Cover the pot and simmer for 2 to 3 hours until everything becomes tender.
- Serve and enjoy!
