Tomato & Beef Stew

Ingredients:

  • 1 Tablespoon olive oil
  • 1 can tomato paste
  • 2 lbs. beef, cubed
  • 1 can stewed tomatoes
  • 4 cups of beef broth
  • 1 medium onion, chopped
  • 1 Tablespoon Worcestershire sauce
  • 3 stalks of celery, chopped
  • 3 large carrots, sliced
  • 1 cup of peas, frozen
  • 1 lb. of potatoes, sliced
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1 Tablespoon thyme, chopped
  • 1/2 teaspoon black pepper
  • 2 teaspoons rosemary, chopped
  • 1 bay leaf (for flavor)

Instructions:

  1. In a large pot on the stove over medium heat, add in the olive oil until it is heated. Next, add in the cubed beef and cook on all sides, about 5 minutes.
  2. Add in the rest of the ingredients to the pot and bring them all to a boil. Cover the pot and simmer for 2 to 3 hours until everything becomes tender.
  3. Serve and enjoy!
