Bruschetta Pasta Salad
Ingredients:
- 2 cloves garlic, chopped
- 1/4 cup shallots, chopped
- 1 Tablespoon olive oil
- 2 1/2 Tablespoons red wine vinegar
- 2 cups tomatoes, chopped
- 4 ounces mozzarella cheese
- 1/4 cup basil, chopped
- 1 Tablespoon balsamic glaze
- 2 cups bowtie pasta (8 ounces dry)
- Salt and pepper to taste
Instructions:
- In a large pot, bring the water to a boil and add salt. Once it is boiling, add in the pasta and cook according to the package.
- In a bowl, combine the garlic, shallots, olive oil, red wine vinegar, salt, pepper and let it sit to marinate.
- Add in the chopped tomatoes, mozzarella and cooked pasta into the marinade and combine. Add the basil and gently mix.
- Top with the balsamic glaze.
- Serve and enjoy!
