Bruschetta Pasta Salad

Ingredients:

  • 2 cloves garlic, chopped
  • 1/4 cup shallots, chopped
  • 1 Tablespoon olive oil
  • 2 1/2 Tablespoons red wine vinegar
  • 2 cups tomatoes, chopped
  • 4 ounces mozzarella cheese
  • 1/4 cup basil, chopped
  • 1 Tablespoon balsamic glaze
  • 2 cups bowtie pasta (8 ounces dry)
  • Salt and pepper to taste

Instructions:

  1. In a large pot, bring the water to a boil and add salt. Once it is boiling, add in the pasta and cook according to the package.
  2. In a bowl, combine the garlic, shallots, olive oil, red wine vinegar, salt, pepper and let it sit to marinate.
  3. Add in the chopped tomatoes, mozzarella and cooked pasta into the marinade and combine. Add the basil and gently mix.
  4. Top with the balsamic glaze.
  5. Serve and enjoy!
