Ginger & Honey Tofu

Ginger & Honey Tofu


Stir Fry:

  • 2 Tablespoons olive oil
  • 14 ounce package of extra firm tofu
  • 1 1/2 uncooked brown rice
  • 2 cups carrots, shredded
  • 3 green onions, minced
  • 1 cups of asparagus, chopped


  • 2 Tablespoons ginger, chopped
  • 3 cloves garlic, minced
  • 1/2 cup tamari or low sodium soy sauce
  • 2 Tablespoons honey
  • 1/4 cup rice wine vinegar
  • 1/4 water
  • 1/4 cup olive oil


  1. Make the sauce: Add all of the sauce ingredients into a blender or food processor and blend until smooth.
  2. Cook the rice: Cook the rice according to the package, set aside for serving.
  3. Make the tofu: Cut the tofu into slices and press it with paper towels to release a lot of the moisture. After that, cut the tofu into small cubes. Heat up the oil in a skillet over medium heat. Add in the tofu once the oil is heated up, and about 1/4 cup of the sauce. Cook the tofu in the skillet until it becomes golden brown.
  4. Cook the vegetables: Using the same pan, add in the chopped up veggies with the remainder of the sauce and mix together. Cook for about 5-8 minutes until the veggie become tender. 
  5. Serve the vegetables and tofu over the brown rice, sprinkle with green onions.
  6. Enjoy!
