Ginger & Honey Tofu
Ingredients:
Stir Fry:
- 2 Tablespoons olive oil
- 14 ounce package of extra firm tofu
- 1 1/2 uncooked brown rice
- 2 cups carrots, shredded
- 3 green onions, minced
- 1 cups of asparagus, chopped
Sauce:
- 2 Tablespoons ginger, chopped
- 3 cloves garlic, minced
- 1/2 cup tamari or low sodium soy sauce
- 2 Tablespoons honey
- 1/4 cup rice wine vinegar
- 1/4 water
- 1/4 cup olive oil
Instructions:
- Make the sauce: Add all of the sauce ingredients into a blender or food processor and blend until smooth.
- Cook the rice: Cook the rice according to the package, set aside for serving.
- Make the tofu: Cut the tofu into slices and press it with paper towels to release a lot of the moisture. After that, cut the tofu into small cubes. Heat up the oil in a skillet over medium heat. Add in the tofu once the oil is heated up, and about 1/4 cup of the sauce. Cook the tofu in the skillet until it becomes golden brown.
- Cook the vegetables: Using the same pan, add in the chopped up veggies with the remainder of the sauce and mix together. Cook for about 5-8 minutes until the veggie become tender.
- Serve the vegetables and tofu over the brown rice, sprinkle with green onions.
