Potato & Kale Soup


  • Large onion, chopped
  • 3 large gold potatoes, chopped
  • 5 Tablespoons butter
  • 3 cups of kale, chopped
  • 2 cups milk of choice
  • 8 cups vegetable broth
  • Salt & pepper to taste


  1. Add the butter into a pot over medium heat. Next, add in the onions and potatoes, cook until they become golden brown in color, add salt & pepper. Next, add in the chopped kale and 6 cups of the vegetable broth, simmer 8-10 minutes.
  2. Transfer the soup bit by bit into a blender and puree for about 3 minutes until it becomes smooth and creamy. After it is all blended, add it back into the pot and add the rest of the vegetable broth and milk, season with salt and pepper to taste.
  3. Serve with some bread or crackers, enjoy!
