Mushroom & Goat Cheese Pasta
Ingredients:
- 2 Tablespoons unsalted butter
- 2 Tablespoons olive oil
- 16 ounces of pasta of choice
- 24 ounces cremini mushrooms, sliced
- 1/2 cup heavy whipping cream
- 1/4 cup garlic, minced
- 1/3 cup white cooking wine
- 1 teaspoon salt
- 1/4 cup parmesan cheese
- 2 cups spinach, chopped
- 1 cup vegetable broth
- 6 ounces goat cheese
Instructions:
- Cook the pasta: Cook the pasta according to the package. Drain and set aside.
- Cook the mushrooms: Add the butter and oil into a large skillet over medium to high heat. Add in the sliced mushrooms and cook until golden brown and soft, about 5-8 minutes. Add in the garlic and cooking wine and stir, then add in the heavy whipping cream and salt.
- Combine: Combine the pasta with the mushroom sauce in a large pot. Add some or all of the vegetable broth depending on how you like it.
- Stir in the spinach and goat cheese just before serving. Serve while the pasta is still warm, top with more parmesan cheese if preferred.
