Mushroom & Goat Cheese Pasta


  • 2 Tablespoons unsalted butter
  • 2 Tablespoons olive oil
  • 16 ounces of pasta of choice
  • 24 ounces cremini mushrooms, sliced
  • 1/2 cup heavy whipping cream
  • 1/4 cup garlic, minced
  • 1/3 cup white cooking wine
  • 1 teaspoon salt
  • 1/4 cup parmesan cheese
  • 2 cups spinach, chopped
  • 1 cup vegetable broth
  • 6 ounces goat cheese


  1. Cook the pasta: Cook the pasta according to the package. Drain and set aside.
  2. Cook the mushrooms: Add the butter and oil into a large skillet over medium to high heat. Add in the sliced mushrooms and cook until golden brown and soft, about 5-8 minutes. Add in the garlic and cooking wine and stir, then add in the heavy whipping cream and salt.
  3. Combine: Combine the pasta with the mushroom sauce in a large pot. Add some or all of the vegetable broth depending on how you like it.
  4. Stir in the spinach and goat cheese just before serving. Serve while the pasta is still warm, top with more parmesan cheese if preferred. 
  5. Enjoy!
