Kale Caesar with Sweet Potato Fries

Ingredients:

Salad & Dressing:

  • 1/2 cup water
  • 1/2 avocado
  • 2 cloves of garlic
  • 2 Tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1 bunch of kale, chopped
  • Parmesan cheese 
  • Pumpkin seeds

Sweet Potato Fries:

  • 4 sweet potatoes
  • Teaspoon of olive oil
  • Salt
  • Pepper
  • Garlic powder 

Instructions:

  1. Sweet potato fries: Preheat the oven to 450 degrees. Peel the sweet potatoes and cut them into long strips (like fries). Toss them with the olive oil, salt, pepper and garlic powder. Add the sweet potatoes to a sheet pan and bake for about 20 minutes, then flip and bake for another 10 minutes.
  2. Cut the avocado into two halves. Reserve one half for the salad and the other half for the dressing.
  3. Make the dressing: Add all of the dressing ingredients, water, avocado, garlic, lemon juice, Dijon mustard, and salt, into a blender and blend until smooth.
  4. Add the chopped kale into a bowl and toss it with the dressing. Top the kale with parmesan cheese, avocado and pumpkin seeds.
  5. Serve and enjoy!
