Tuscan Farmers Scramble

Ingredients:

  • 1-2 Tablespoons olive oil
  • 4 cloves of garlic, minced
  • 1/2 onion, diced
  • 1 can of diced tomatoes
  • 1 Tablespoon rosemary, chopped
  • 1 cup of vegetable stock
  • 1 can of cannellini beans, drained and rinsed
  • 1/2 teaspoon salt
  • 4-6 eggs
  • 1/4 teaspoon chili flakes
  • Tortillas (to serve with)
  • 1/2 cup spinach (optional)

Instructions:

  1. In a skillet. heat the oil and then add in the diced onions and sauté for about 3 minutes over medium to high heat. Turn the heat down to medium and then add in the garlic, sauté until it becomes golden. Once the onions are tender, add in the herbs and cook for one more minute. 
  2. Next, add in the cannellini beans, diced tomatoes and vegetable stock. Add in the chili flakes and salt, then bring it to a simmer on medium to low heat for about 5 minutes. At this point you can add in the spinach if you are using it.
  3. Add little wells into the beans and add the eggs into them to cook. Season the eggs with salt and pepper, add a lid onto the skillet and let them simmer until they are cooked.
  4. Serve with tortillas and enjoy!
