Cheeseburger Casserole

Ingredients:

  • 6 ounces rotini pasta, uncooked
  • 1 1/2 cups onions, chopped
  • 2 teaspoons olive oil
  • 1 clove garlic, minced
  • 1 lb. lean ground beef
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon salt
  • 28 ounces diced tomatoes
  • 2 Tablespoons tomato paste
  • 2 Tablespoons Dijon mustard 
  • 1/4 cup dill pickles, chopped
  • 2 cups cheddar cheese, grated

Instructions:

  1. Preheat the oven to 350 F and spray a baking pan with cooking spray.
  2. Cook the pasta according to the package in a pot of boiling salted water.
  3. In a large skillet, heat the olive oil over medium-low heat. Add in the onions and cook until they become soft, then add in the garlic for about 30-seconds. 
  4. Add in the beef to the skillet and cook until it is browned, season with salt and pepper.
  5. Next, stir in the tomato paste, then add in the Dijon mustard and diced tomatoes. Stir and let this mixture sit until it bubbles (about 2-3 minutes). 
  6. Mix together the cooked pasta and the meat sauce into the baking dish.
  7. Top with the cheddar cheese and bake until the cheese is melted (about 15-20 minutes). Top with the chopped pickles and serve.
  8. Enjoy!
