Ingredients:
- 6 ounces rotini pasta, uncooked
- 1 1/2 cups onions, chopped
- 2 teaspoons olive oil
- 1 clove garlic, minced
- 1 lb. lean ground beef
- 1/2 teaspoon black pepper
- 3/4 teaspoon salt
- 28 ounces diced tomatoes
- 2 Tablespoons tomato paste
- 2 Tablespoons Dijon mustard
- 1/4 cup dill pickles, chopped
- 2 cups cheddar cheese, grated
Instructions:
- Preheat the oven to 350 F and spray a baking pan with cooking spray.
- Cook the pasta according to the package in a pot of boiling salted water.
- In a large skillet, heat the olive oil over medium-low heat. Add in the onions and cook until they become soft, then add in the garlic for about 30-seconds.
- Add in the beef to the skillet and cook until it is browned, season with salt and pepper.
- Next, stir in the tomato paste, then add in the Dijon mustard and diced tomatoes. Stir and let this mixture sit until it bubbles (about 2-3 minutes).
- Mix together the cooked pasta and the meat sauce into the baking dish.
- Top with the cheddar cheese and bake until the cheese is melted (about 15-20 minutes). Top with the chopped pickles and serve.
