Carrot Cake Oatmeal Bars
Ingredients:
- 2 eggs
- 1 cup carrots, grated
- 1/4 cup maple syrup
- 1/4 cup light brown sugar
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 cup oat flour
- 1 cup oats ( quick cooking)
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
For Frosting (optional):
- 1 Tablespoon maple syrup
- 3 ounces cream cheese
- 1/4 teaspoon vanilla extract
- 1 Tablespoon milk
Instructions:
- Preheat the oven to 350 F.
- In a bowl, whisk together the dry ingredients (oats, oat flour, cinnamon, baking powder, salt, nutmeg).
- In a different bowl, whisk together the eggs, maple syrup, coconut oil, brown sugar and vanilla extract.
- Add the wet ingredients into the dry and combine, then add in the grated carrots and mix everything together.
- Add this mixture into a lined baking pan and spread out evenly. Cook for 30 minutes, until a toothpick comes out clean from the center.
- Remove from the oven and let cool for about 5 minutes before transferring to a cooling rack.
- While these are cooling, make the cream cheese frosting if using. Heat the cream cheese in the microwave in 30-second intervals, then add in the other ingredients and mix to combine.
- Cut the bars once they are cooled and drizzle with the cream cheese frosting.
- Serve and enjoy!
