Carrot Cake Oatmeal Bars

Carrot Cake Oatmeal Bars

Ingredients:

  • 2 eggs
  • 1 cup carrots, grated
  • 1/4 cup maple syrup
  • 1/4 cup light brown sugar
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup oat flour
  • 1 cup oats ( quick cooking)
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg

For Frosting (optional):

  • 1 Tablespoon maple syrup
  • 3 ounces cream cheese
  • 1/4 teaspoon vanilla extract
  • 1 Tablespoon milk 

Instructions:

  1. Preheat the oven to 350 F. 
  2. In a bowl, whisk together the dry ingredients (oats, oat flour, cinnamon, baking powder, salt, nutmeg). 
  3. In a different bowl, whisk together the eggs, maple syrup, coconut oil, brown sugar and vanilla extract.
  4. Add the wet ingredients into the dry and combine, then add in the grated carrots and mix everything together. 
  5. Add this mixture into a lined baking pan and spread out evenly. Cook for 30 minutes, until a toothpick comes out clean from the center.
  6. Remove from the oven and let cool for about 5 minutes before transferring to a cooling rack.
  7. While these are cooling, make the cream cheese frosting if using. Heat the cream cheese in the microwave in 30-second intervals, then add in the other ingredients and mix to combine. 
  8. Cut the bars once they are cooled and drizzle with the cream cheese frosting. 
  9. Serve and enjoy!
