Chicken Parmesan Meatballs
Ingredients:
- 1/2 cup parmesan cheese
- 1 lb. ground chicken
- 1 egg
- 1/3 cup panko breadcrumbs
- 3/4 teaspoon salt
- 3/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/2 teaspoon red pepper flakes
- 1/2 cup olive oil
- 1/2 cup flour
- 1 bag mozzarella balls
- 1 jar marinara sauce
- Handful of basil, fresh
Instructions:
- Preheat the oven to 350 F.
- In a large mixing bowl, add in the ground chicken, egg, parmesan cheese, breadcrumbs, salt, pepper, parsley, oregano, red pepper flakes and combine with your hands until everything is evenly mixed.
- Form the mixture into meatballs, about the size of a golf ball.
- Insert one mozzarella ball into the center of each meatballs.
- Roll each meatball in the flour and lightly coat it.
- Heat the olive oil in a large skillet over medium heat. Once it is heated, add half of the meatballs and sauté for 3-4 minutes, turning every minute or so to brown them.
- Once all meatballs are browned, add in the tomato sauce to the skillet and add in the meatballs.
- Transfer the skillet with everything in it into the oven and let the meatballs continue to bake for 15 minutes until they are cooked through.
- Remove the skillet from the oven and add some salt, pepper, basil, and more mozzarella on top.
- Serve immediately and enjoy!
