Chicken Parmesan Meatballs

Chicken Parmesan Meatballs

Ingredients:

  • 1/2 cup parmesan cheese
  • 1 lb. ground chicken
  • 1 egg
  • 1/3 cup panko breadcrumbs
  • 3/4 teaspoon salt
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup olive oil
  • 1/2 cup flour
  • 1 bag mozzarella balls
  • 1 jar marinara sauce
  • Handful of basil, fresh

Instructions:

  1. Preheat the oven to 350 F.
  2. In a large mixing bowl, add in the ground chicken, egg, parmesan cheese, breadcrumbs, salt, pepper, parsley, oregano, red pepper flakes and combine with your hands until everything is evenly mixed.
  3. Form the mixture into meatballs, about the size of a golf ball.
  4. Insert one mozzarella ball into the center of each meatballs.
  5. Roll each meatball in the flour and lightly coat it.
  6. Heat the olive oil in a large skillet over medium heat. Once it is heated, add half of the meatballs and sauté for 3-4 minutes, turning every minute or so to brown them.
  7. Once all meatballs are browned, add in the tomato sauce to the skillet and add in the meatballs.
  8. Transfer the skillet with everything in it into the oven and let the meatballs continue to bake for 15 minutes until they are cooked through.
  9. Remove the skillet from the oven and add some salt, pepper, basil, and more mozzarella on top.
  10. Serve immediately and enjoy!
