Baked Egg & Feta Casserole

Baked Egg & Feta Casserole

Ingredients:

  • 1/3 cups onions, chopped
  • 1 pint of cherry tomatoes, halved
  • 12 ounce feta cheese block
  • 2 cloves of garlic, minced
  • 1 Tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 10 large eggs
  • 2 handfuls of spinach, chopped
  • 1 bell pepper, chopped

Instructions:

  1. Preheat the oven to 400°F.
  2. In an oven safe baking dish, add the onions, garlic, cherry tomatoes, and feta cheese. Season with salt, pepper, red chili flakes, and add olive oil. Mix then bake for 20 minutes.
  3. Once it is finished baking, lower the oven to 350°F. Mash all of the ingredients together using a fork, let it cool for about 10 minutes.
  4. While that is cooling, crack the 10 eggs into a bowl and whisk together, and chop the bell pepper and spinach.

  5. Once the dish has cooled add in your eggs, spinach, and bell pepper. Mix and place it back into the oven for 35-40 minutes.

  6. Once it is finished cooking, remove from the oven and serve immediately.

*Can be stored in the freezer for up to 3 months*
