Fall Kale & Brown Rice Salad
Ingredients:
Salad:
- 1 bunch of kale
- 2 cups of brown rice, cooked
- 1 Tablespoon olive oil
- Dried cranberries, to top
Dressing:
- One orange, juiced
- One lemon, juiced
- 1 garlic clove, minced
- 1/2 cup olive oil
- 1/2 cup parsley, chopped
- 1-2 teaspoons maple syrup
- 1/2 teaspoon salt
Instructions:
- Make the dressing. Add all of the components into a blender/food processor until it becomes smooth.
- Heat the olive oil in a pan over medium heat. Add in the kale and sauté until it is wilted.
- Next, add in the brown rice and mix together until everything is heated through.
- Add in half of the dressing amount into the pan and combine.
- Add into a bowl, add the rest of the dressing and dried cranberries.
- Optional: add grilled chicken, tofu, fried egg for extra protein!
- Serve and enjoy!
