Fall Kale & Brown Rice Salad

Fall Kale & Brown Rice Salad



  • 1 bunch of kale
  • 2 cups of brown rice, cooked
  • 1 Tablespoon olive oil
  • Dried cranberries, to top


  • One orange, juiced
  • One lemon, juiced
  • 1 garlic clove, minced
  • 1/2 cup olive oil
  • 1/2 cup parsley, chopped
  • 1-2 teaspoons maple syrup
  • 1/2 teaspoon salt


  1. Make the dressing. Add all of the components into a blender/food processor until it becomes smooth.
  2. Heat the olive oil in a pan over medium heat. Add in the kale and sauté until it is wilted.
  3. Next, add in the brown rice and mix together until everything is heated through.
  4. Add in half of the dressing amount into the pan and combine.
  5. Add into a bowl, add the rest of the dressing and dried cranberries.
  6. Optional: add grilled chicken, tofu, fried egg for extra protein!
  7. Serve and enjoy!
