Fall Pumpkin Muffins!
Ingredients:
- 1 cup of pumpkin puree
- 1/2 cup of maple syrup
- 2 cups rolled oats
- 6 ounces plain green yogurt
- 2 eggs
- 1 teaspoon baking soda
- Pinch of salt and cinnamon
- Optional chocolate chips
Instructions:
- Preheat the oven to 375 F.
- In a food processor or blender, add in the rolled oats and blend until it forms a powder.
- Add in the rest of the ingredients to the blender (maple syrup, pumpkin puree, yogurt, eggs, baking soda, cinnamon, salt) and then pulse to combine.
- Stir in the chocolate chips if using them.
- Line a muffin tray with muffin papers or grease them. Add the batter into the muffin trays.
- Bake muffins for 15 minutes. Once done, take out and let cool in tray, then transfer to a cooling rack to finish cooling.
- Serve and enjoy!
