Fall Pumpkin Muffins!

Ingredients:

  • 1 cup of pumpkin puree 
  • 1/2 cup of maple syrup
  • 2 cups rolled oats
  • 6 ounces plain green yogurt
  • 2 eggs
  • 1 teaspoon baking soda
  • Pinch of salt and cinnamon 
  • Optional chocolate chips

Instructions:

  1. Preheat the oven to 375 F.
  2. In a food processor or blender, add in the rolled oats and blend until it forms a powder.
  3. Add in the rest of the ingredients to the blender (maple syrup, pumpkin puree, yogurt, eggs, baking soda, cinnamon, salt) and then pulse to combine.
  4. Stir in the chocolate chips if using them.
  5. Line a muffin tray with muffin papers or grease them. Add the batter into the muffin trays.
  6. Bake muffins for 15 minutes. Once done, take out and let cool in tray, then transfer to a cooling rack to finish cooling.
  7. Serve and enjoy!
