Honey Mustard Salmon Bites

Ingredients:
- 1 pound salmon fillet, cut into 1-inch pieces
- 1/4 teaspoon salt
- 2 Tablespoons unsalted butter, melted
- 1/4 teaspoon pepper
- 1 Tablespoon maple syrup
- 1 1/2 Tablespoons Dijon mustard
- Parsley, chopped (for garnish)
Instructions:
- Preheat the oven to broil with the rack about 4 inches from the heat source. Line a large rimmed baking sheet with foil. Toss the salmon pieces with 2 Tablespoons melted butter, 1/4 teaspoon salt and pepper in a bowl. Arrange the pieces of salmon onto the baking sheet and broil until the salmon is slightly browned around the edges (about 5 to 6 minutes).
- In a small bowl, add in the 1 Tablespoon maple syrup and 1 1/2 Tablespoons mustard and whisk together until combined. Remove the salmon bites from the oven and spoon about half of the mixture on top.
- Add back into the oven and broil for about another 2 minutes. Remove from the oven and drizzle the rest of the maple syrup and mustard mix on top.
- Transfer to a platter to serve and top with parsley.
- Serve and enjoy!
