Honey Mustard Salmon Bites

Ingredients:

  • 1 pound salmon fillet, cut into 1-inch pieces 
  • 1/4 teaspoon salt
  • 2 Tablespoons unsalted butter, melted
  • 1/4 teaspoon pepper
  • 1 Tablespoon maple syrup
  • 1 1/2 Tablespoons Dijon mustard
  • Parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to broil with the rack about 4 inches from the heat source. Line a large rimmed baking sheet with foil. Toss the salmon pieces with 2 Tablespoons melted butter, 1/4 teaspoon salt and pepper in a bowl. Arrange the pieces of salmon onto the baking sheet and broil until the salmon is slightly browned around the edges (about 5 to 6 minutes). 
  2. In a small bowl, add in the 1 Tablespoon maple syrup and 1 1/2 Tablespoons mustard and whisk together until combined. Remove the salmon bites from the oven and spoon about half of the mixture on top.
  3. Add back into the oven and broil for about another 2 minutes. Remove from the oven and drizzle the rest of the maple syrup and mustard mix on top. 
  4. Transfer to a platter to serve and top with parsley.
  5. Serve and enjoy!
