Avocado Tuna Salad

Avocado Tuna Salad

Ingredients:

  • 2 Tablespoons lemon juice
  • 3 Tablespoons olive oil
  • 2 medium avocados, chopped
  • 1/4 teaspoon salt
  • 4 cups romaine hearts
  • 2 cans white tuna in water, drained
  • 1/3 cup feta cheese crumbles
  • 1 cup English cucumber, chopped
  • 1/4 cup sliced almonds, toasted
  • 3 Tablespoons parsley, chopped
  • 1/4 cup Kalamata olives, chopped

Instructions:

  1. Whisk together the lemon juice, olive oil and salt in a bowl. Add in the avocado chunks and toss around to coat, then add in the tuna, cucumbers, feta, romaine, olives, almonds and parsley, toss all together. 
  2. Portion into bowls and serve immediately, enjoy!
