Avocado Tuna Salad
Ingredients:
- 2 Tablespoons lemon juice
- 3 Tablespoons olive oil
- 2 medium avocados, chopped
- 1/4 teaspoon salt
- 4 cups romaine hearts
- 2 cans white tuna in water, drained
- 1/3 cup feta cheese crumbles
- 1 cup English cucumber, chopped
- 1/4 cup sliced almonds, toasted
- 3 Tablespoons parsley, chopped
- 1/4 cup Kalamata olives, chopped
Instructions:
- Whisk together the lemon juice, olive oil and salt in a bowl. Add in the avocado chunks and toss around to coat, then add in the tuna, cucumbers, feta, romaine, olives, almonds and parsley, toss all together.
- Portion into bowls and serve immediately, enjoy!
