Pistachio & Pumpkin Energy Balls

Ingredients:
- 1/4 cup cashews
- 1/2 cup pistachios
- 1/4 cup pumpkin puree
- 10 Medjool dates, pitted
- 1/2 teaspoon pumpkin spice mix
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions:
- Add 1/4 cup of the pistachios into a food processor, process until they become dusty, set aside.
- Add the cashews and the remaining pistachios into the food processor and process until they are finely ground together.
- Next, add in the dates, spices, pumpkin puree and vanilla extract, process until everything is combined and smooth.
- Scoop and roll the mixture into 9 equal (golf ball size) balls.
- Roll the balls in the reserved pistachio dust.
- Serve immediately or store in the freezer or fridge.
