Pistachio & Pumpkin Energy Balls

Pistachio & Pumpkin Energy Balls

Ingredients:

  • 1/4 cup cashews
  • 1/2 cup pistachios
  • 1/4 cup pumpkin puree
  • 10 Medjool dates, pitted
  • 1/2 teaspoon pumpkin spice mix
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions:

  1. Add 1/4 cup of the pistachios into a food processor, process until they become dusty, set aside.
  2. Add the cashews and the remaining pistachios into the food processor and process until they are finely ground together.
  3. Next, add in the dates, spices, pumpkin puree and vanilla extract, process until everything is combined and smooth. 
  4. Scoop and roll the mixture into 9 equal (golf ball size) balls.
  5. Roll the balls in the reserved pistachio dust.
  6. Serve immediately or store in the freezer or fridge.
