Whipped Feta with Crispy Chickpeas
Ingredients:
- 1 can chickpeas, drained and rinsed
- 6 Tablespoons olive oil
- 1/2 teaspoon smoked paprika
- 1 teaspoon coriander, ground
- 1/2 teaspoon turmeric, ground
- 1/4 teaspoon cumin, ground
- 1/4 teaspoon salt
- 1 clove garlic, grated
- 1 1/2 cups feta cheese, crumbled
- 1/4 cup low fat Greek yogurt
- 1 teaspoon lemon juice
- 2 teaspoons oregano, chopped
- Pita chips for serving (optional)
Instructions:
- Heat 2 tablespoons oil in a large skillet over medium heat. Pat the chickpeas dry, then add them into the pan. Cook, stirring occasionally, until crispy and browned (about 18 minutes).
- Add 1 teaspoon coriander, ½ teaspoon each paprika and turmeric, ¼ teaspoon each cumin and salt and 1 tablespoon oil; cook over medium-high heat, stirring constantly, until the chickpeas are fragrant and coated in the spice mixture, 1 to 2 minutes.
- In a food processor, add the feta cheese, yogurt, 2 Tablespoons olive oil, garlic, 1 teaspoon oregano, 1 teaspoon lemon juice and process until it becomes smooth.
- Add the mixture into a serving bowl and top with the crispy chickpeas and the remaining oregano and olive oil.
- Serve with pita chips and enjoy!
