Ingredients:
Dressing
- 1/4 cup olive oil
- 1 Tablespoons honey
- 1 clove of garlic, minced
- 1/4 teaspoon cumin
- 1 lemon, zested and juiced
- Salt and pepper to taste
Mango Cowboy Caviar
- 2 mangoes, diced
- 2 avocados, diced
- 1/4 red bell pepper diced
- 1 jalapeno, minced
- 1 cup cherry tomatoes, chopped
- 1/2 cup mint, cilantro and basil, chopped
- 1 can black beans, drained and rinsed
- 1/4 red onion, diced
- Salt to taste
Instructions:
- Combine the dressing ingredients into a bowl and whisk them together.
- Combine the ingredients for the cowboy caviar together into a seperate bowl. Add the dressing on to the caviar as well as the salt and pepper to taste, combine.
- Serve with tortilla chips or crackers.
- Enjoy!
